On this day, we visited Frantoio il Mandorlo, an olive grove located in the northern part of Florence.

In this orchard spread across rolling hills, high-quality olives rich in oleic acid and polyphenols—both known for their health benefits—are carefully cultivated. These components are believed to help lower bad cholesterol, reduce the risk of heart disease, provide antioxidant effects, and help regulate blood pressure.

On the day of our visit, in addition to the regular olives, we were also offered samples of rare white olives. This marked an important first step toward their potential application in future pharmaceutical development.
